Throughout the year, and with the signature of the prestigious “École de Cuisine d’Alain Ducasse”, L’Olive restaurant offers the best of fine dining at Vila Sol Spa & Golf Resort.
The greatest care is taken in the selection of the raw materials to assmeble our menus. Only fresh products are used, organic wherever possible. Genuine ingredients from French and Italian kitchens are used; a wide variety of aromatic herbs, edible flowers, fresh mushrooms such as porcini, truffles and morels. Foie Gras, scallops and the best Italian pastas, along with our own home-baked bread, are among other special treasures in our kitchen.
The “Centro de Formação Alain Ducasse” was commission to train the entire team at L’Olive restaurant in order to achieve such a high level of quality.
Vila Sol secured the services of Chef Tell Wagner to manage the kitchen of this restaurant. A native of Germany, he has vast experience in distinctive and fine restaurants with two and three Michelin stars.
This restaurant also has an extensive wine list, with a carefully selected choice representing the best wines from the most well-known wine regions in Portugal, Italy and France.
