Description: Named after the famed 14th Century Cook to several French kings who was credited with writing the seminal medieval cookbook Le Viander, this venerable Parisian institution was founded in 1946 by André Vrinat and is today run by his son Jean-Claude, who has been working in the restaurant since 1962. Alain Solivérès took over the kitchen in 2002 and, although modern art was introduced into the dining room's wood-panelled interior, the kitchen steers away from the experimental, without, however, being a slave to classicism in combinations such as a Boudin of Breton Lobster and Scottish Salmon Cooked in Sea Salt.
