Description: Jean-Francoise Piège arrived at Les Ambassadeurs as Head Chef in early 2004, fresh from running the kitchen at Alain Ducasse's Plaza Athénée operation, after having first worked under Ducasse at the Louis XV in 1992. Piège's cooking is as luxurious as his CV and Les Ambassadeurs' setting within the Hôtel de Crillon would suggest. Built in 1775, the baroque ballroom turned gastronomic dining room was given a makeover in 2004 by the famed Parisian interior designer Sybille de Margerie. She restored the Baccarat chandeliers that hang from its ornate 25ft ceiling and throw light on the seven shades of Sienna marble that furnish the floor and walls.
