Description: Brothers Joan, Josep and Jordi Roca have come a long way since El Celler de Can Roca was set up in 1986, in the space next door to the simple Catalan bar and restaurant their parents ran, and indeed still run.
It's in an unlikely spot on a suburban street in Girona, with the destination fine-dining establishment linked to the old-fashioned bar by a connecting door. El Celler staff still sit down to a meal next door every day. This year, however, they're preparing to enter a new era with a move to new downtown premises. The emphasis on superb Spanish wines (overseen by Josep) and on Catalan culinary traditions and avant-garde techniques won't change.
Joan Roca is in the major league of Spanish chefs; indeed he wrote the book - literally - on sous-vide cuisine. His technically accomplished dishes are inspired by the region, memory, traditions, and the seasons, all the while charting new terrain aided by his international kitchen brigade. Youngest brother and Pastry Chef, Jordi, gets a free rein in the kitchen, where his precise, jewel-like desserts draw on inspirations as diverse as colours and perfumes.
It's hard to picture El Celler anywhere else, but it's clear its popularity has outgrown the original site. Go there now, so you can show off in years to come - 'I remember the old days...'
