Description: Bernard Pacaud's a reluctant star. For the publicity-shy chef of the bijou L'Ambroisie at the Place des Vosges, the ingredient is the real star. Pacaud is renowned for accepting only the best produce of the season; anything less than perfect will not pass muster. L'Ambroisie began its life in 1981 with just nine tables in a tiny Left Bank property. In 1986, Pacaud and his wife Danielle upsized to 38 covers across two 'très cosy' rooms in a converted silversmith's in the 4th arrondissement. Don't expect fireworks from the all à la carte menu (no trendy tasting menus here); settle into the palazzo-style, surroundings and sample classical cuisine that's close to perfection.
