Description: From humble origins as a simple café run by current incumbent Sergio Herman's grandfather, Oud Sluis has become the Netherland's most fashion-forward restaurant. Since the dashing Herman took over the stove in 1990, he has introduced advanced techniques and exotic ingredients to the mix, transforming the simple local seafood into dishes well worthy of international acclaim. Seafood is Herman's strong suit, much of it given a modern Japanese spin, as in Semifreddo of Soya with Marinated Toro Tuna and Fresh Shrimp Tartare, Langoustine Tartare with Yuzu and Olive Oil Emulsion, Tagliatelle of Langoustine Jelly and Shiso.
